THROW DOWN WITH POTATOES…LOVELY POTATOES! I love Potatoes so much I am dedicating a whole new page to them! 🙂
We eat a lot of potatoes! Sometimes it seems like it’s a couple nights a week. Especially at the end at the end of the week, when we are trying to clean out the fridge and use up leftovers and also at the end of the month when we are running close to maxing out our monthly grocery budget and need to find healthlier, less expensive things to eat for lunch and/or dinner. I have found that you can always bake a potato in the oven or microwave and add just about anything and everything because tonight I pulled out chocolate frosting from my mom’s fridge and put it back and thought to myself, “another time and place and that chocolate frosting just might end up on my potato at some point, incorprated in some sort of chocolate mole or cocoa chipotle something or another”! Crazy stuff like that is always floating in my brain!
With that being said, I have dedicated this page to POTATOES! Because we love them! I will add most things we make with them to the regular blog, but I feel that potatoes hold such a special place in my heart that they need their own page.
So without further ado…The First Potato Throw Down!
Seriously folks, this was all left over stuff that was used in making this AWESOME BAKED POTATO!
About 1-2 tablespoons of salsa that had been previously mixed with a little bit of my silken tofu mayo/sour cream mixture
About 2 tablespoons of Tofutti or non-dairy cream cheese
2 tablespoons chives, minced
1/2 tablespoon hot banana peppers
Peas, frozen, 1/2-ish cup
Wash and pierce the potato and cook it in the microwave in a small casserole dish with a bit of water, flipping a couple times until it’s done. About 5-8 minutes, depending on your microwave.
Slice the potato in half but not all the way through and smash the insides to your liking….not to much though! Beacause the best is yet to come while you eat it! Pile the salsa/cream cheese mixture, hot pepper, chives and peas all over and around the potato as you see fit! Trust me, there is no right or wrong way to do this! JUST SMOOTHER IT and eat it like you care, beause you really do! Seriously, you really do care!
